This was an experiment that turn out quite well one night. This is a little different than tabbouleh because I used quinoa and there is no mint and no green onions and I didn't peel the tomatoes or cucumbers. You can experiment with the flavors that you like.
Quinoa with Tomatoes and Cucumbers
Serves 8
1 C QUINOA
3 TOMATOES, CHOPPED
2 CUCUMBERS, SEEDED
½ CUP SWEET ONION
2 CLOVES GARLIC, MINCED
1 C FRESH PARSLEY, CHOPPED
⅓ C LEMON JUICE
½ C OLIVE OIL
SALT TO TASTE
COOK THE QUINOA ACCORDING TO BOX DIRECTIONS, 1 CUP QUINOA, 2 CUPS WATER. ADD ALL THE CHOPPED INGREDIENTS, LEMON JUICE AND OLIVE. SALT TO TASTE
