MEDITERRANEAN QUINOA

The latest research on the Mediterranean Diet shows it to be one of the healthiest in the world.  Mediterranean Quinoa is filled with vitamins and is gluten free.   This recipe is so good for you and so delicious.  I choose it to serve to my girlfriends at our recent lunch.   Quinoa is similar to tabbouleh but with quinoa.

MEDITERRANEAN QUINOA

6 Servings

  • 1 cup quinoa
  • 1/2 teaspoon salt
  • 2 tablespoons lemon juice
  • 1 clove garlic, minced
  • `1/2 cup olive oil
  • fresh ground pepper
  • 1 large cucumber or 2 small one
  • 1 cup sun dried tomatoes cut in half or 1 cup cherry tomatoes cut in half
  • 2/3 cup parsley, chopped
  • 1/2 cup mint, chopped
  • 2 scallions, sliced

Cook the guinoa according to package directions and cool.   Mix the olive oil, lemon juice, garlic, pepper and salt together and set aside.  Mix the remainder of the ingredients and add the quinoa when cooled.  Toss with the dressing.  Can be made 1 day ahead.
