BACON AND PROSCIUTTO WRAPPED ASPARAGUS

Bacon and Prosciutto Wrapped Asparagus is a low-carb appetizer or side dish. The original recipe called for Prosciutto so I bought a package.  When I started to make these I realized there were only 6 slices in a package of prosciutto and I couldn’t really cut the prosciutto in half to roll around the asparagus so I ended up using prosciutto and bacon.  I found the bacon to be tastier than the prosciutto, but the prosciutto cooked up crisper.   The bacon takes longer to cook so I suggest precooking the bacon in the microwave for 2 minutes and then wrapping around the asparagus.  So the basic recipe is very simple and a big crowd pleaser.

Bacon and Prosciutto Wrapped Asparagus

Ingredients:

  • Asparagus, enough for 3 or 4 per person
  • Bacon or Prosciutto, 1 slice for each asparagus stalk
  • 1 teaspoon olive oil
  • salt and pepper

Method:

Cut off woody ends on each asparagus stalk.  Pour 1 teaspoon extra virgin olive oil over the asparagus and rub on all sides. (optional)  Take one piece of bacon or prosciutto and wrap around each asparagus stalk.  Place on a baking pan and add salt and pepper.  Bake on 400 degrees for 15 minutes or until prosciutto or bacon is cooked.  Serve immediately.
