I decided to make it but changed up a little by adding some lime juice to the mix and also less milk. Here is my recipe and it turned out to be more like a pudding but still delicious. It’s high in protein and fiber and low in calories. The green in this drink is all natural with the addition of avocado. Easy to make!
Skinny Shamrock Mousse
- 1/4 cup fat free milk (add more milk at the end if you want a smoothie)
- 3/4 cup Stonyfield Organic 0% fat vanilla frozen yogurt
- 1/2 cup sliced avocado
- a few drops Stevia or 1 tbsp raw sugar
- 1/4 tsp mint extract (not Peppermint)
- 1 tbsp lime juice
Place all ingredients in a food processor or mixer and puree until smooth. Serve in a pretty cup with a slice of lime or mint.
