CHOCOLATE CHIP OATMEAL QUINOA COOKIES

You are going to love these Chocolate Chip Oatmeal Quinoa Cookies!  So easy to make and healthy.  I made these delicious cookies by combining a couple of recipes, adding my own touches and they turned out great.  Oatmeal and quinoa add to the texture and peanut butter and almond butter add to the moistness.  Then coconut, brown sugar, chocolate chips and craisins supply the sweetness.  There are no eggs, no flour but you wouldn’t know it by the terrific taste.  These cookies are high in protein and gluten free.

I’m always looking for recipes for the little ones in the family that are healthy foods and will provide some of the vitamins that they missed at the main meal.   My grandson is very picky about what he eats.  When he was 2 he would eat a lot of vegetables and meats but now he seems turned off by those same foods.  I think he doesn’t like the texture of some foods. But unfortunately he does like sweets.

    My daughter was, and still is, a bit of a picky eater. She wouldn’t eat meat when she was younger, purely because she loved animals. So we always had to come up with ways to make sure she got everything she needed nutrient-wise. I wish I had known about blogging back then. It’s a whole new world out there for moms. So much access to great recipes like this one. I applaud anyone who gets creative in the kitchen.

      My grandson is a very picky eater so I’m always trying to come up with things for him to eat with some nutrients. It can be a challenge!

    I really love the idea of using quinoa in cookies!! Great texture, and something different from the usual (and we know how guilty everyone is going to feel after Christmas dinner!)

    Love that this has no eggs or flour. I’ve never made cookies with quinoa before but we have all of the ingredients in our pantry right now – can’t wait to try these! I bet my kids and their friends would love these as after school snacks!
