You might wonder what is a Pina Colada Waffle Cookie. Last month was the Eggo Waffle Contest. I planned to enter and came up with a delicious recipe but it was just before I was set to go out of town on vacation and then a lot of last minute things happened and I never got to submit the recipe before I left. So here it is for your enjoyment.
Pina Colada Waffle Cookie
Ingredients:
- 24 miniature eggo waffles
- 1 cup butter, melted
- 1 ½ cups coconut
- 1 cup pineapple, chopped and drained
- 1 cup heavy cream, whipped
- 1 cup whipped cream cheese
- 2 tablespoons honey
Instructions:
Separate the Eggo waffles and dip in the melted butter. Then dip the buttered waffles in flaked coconut and make sure to press the coconut into each waffle. Place on a baking sheet and bake at 350 degrees for 10-15 minutes. Watch to make sure the coconut does not burn but is brown. Set aside to cool.
Place the cream cheese in a bowl and add the honey. Then stir in the drained pineapple. Then fold in the whipped heavy cream.
When waffles are cooled place a dollop of the pineapple cream mixture on top of 12 of the waffles and top each one with another waffle. Make sure that the brown sides are on the outside of each one.
