85 Tilapia with Mango and Avocado Salsa

TILAPIA WITH MANGO AND AVOCADO SALSA

I made these last night for 26 people at an event at the church.  Everyone loved the Tilapia with Mango and Avocado Salsa and many asked for the recipe. You could also use walleye, cod or salmon for this dish.  If you are like me and like your salsa spicy, add 1/2 a chopped and seeded jalapeno.

TILAPIA WITH MANGO AND AVOCADO SALSA

INGREDIENTS:

  • 4 Tilapia Filets
  • 1 cup flour
  • 1 t salt
  • 1 t pepper
  • 1 t cumin
  • 1 t garlic powder
  • 1/2 cup light olive oil
  • 1 mango diced
  • 1 avocado diced
  • 1/2 cup fresh cilantro, chopped
  • 1/4 cup fresh mint leaves, chopped
  • juice of 1/2 large lime

DIRECTIONS:
MIX TOGETHER THE FLOUR, CUMIN, SALT, PEPPER AND GARLIC POWDER.   SALT AND PEPPER THE TILAPIA FILETS.  LIGHTLY DIP EACH FILET IN THE FLOUR MIXTURE.  FRY IN LIGHT OLIVE OIL (HEART HEALTHY), UNTIL LIGHTLY BROWNED.
MIX TOGETHER THE MANGO AND AVOCADO, CILANTRO AND MINT AND LIME JUICE AND JALAPENO PEPPER (IF DESIRED).  TO SERVE TOP EACH FILET WITH A SCOOP OF THE MANGO AND AVOCADO SALSA.
