I think Mexican Eggs are a tasty way to start a weekend morning. I’ve changed my views on Mexican Eggs but I did have bad memories of them from when I was in Acapulco many years ago. I had won a trip to Acapulco for being a top sales rep. at my job. Little did I know that I was pregnant at the time so I spent a lot of time in the ladies room. I even went Parasailing not knowing I was pregnant. Well the eggs did get a bad rap because of my illness and I wouldn’t eat Mexican eggs with salsa on them for years. I’ve changed a lot since then and developed an appetite for all kinds of food and I love salsa with my eggs.
Here is a great way to make these most delicious eggs.
Mexican Eggs
Serves 2
- 2 corn tortilla
- 1 or 2 eggs per person (I had one and my husband had 2)
- 4 slices fried and crumbled breakfast sausag
- 1/2 c cheddar chees
- Salsa (the spicier the better for me
- Cilantro chopped for garnis
Saute the corn tortilla in a little olive oil on each side until a little crisp.
Poach or baste your eggs and drain.
Place your eggs on the tortillas, sprinkle 1/4 c cheddar cheese on each. Sprinkle with cilantro and serve the salsa on the side. Enjoy!
