Healthy Nut Bread

This recipe for Healthy Nut Bread was developed after my physical trainer and friend, health guru, Pat Hagan from “Bodies in Motion” posted on facebook that I should make a special gluten free bread that was posted on one of her health websites.  So I decided I would make the bread and take it to my exercise class the following week.  Pat has been eating gluten free for several years and now has recently started eating grain free.  It makes her feel better to eat this way and in the process she has lost weight.  She has always eaten healthy and is a great source of inspiration to stay fit!

My exercise class was on Monday and I couldn’t find the recipe on Sunday the day I was going to make the bread for the class the next day and decided to hunt for another healthy gluten free bread.  I found a recipe for Paleo Nut Bread from The Family Cooks..   My version of Healthy Nut Bread is different in that I added natural applesauce, orange juice and cinnamon and my own combination of nuts and fruits.   There are four types of nuts in this bread and flax seeds.  I left the nuts and seeds chunky.  You can leave them whole but I did put them in the food processor for a light chop.

Pat seemed to really enjoy the bread the next day.  It’s really difficult to find delicious breads that are gluten free and without any flour, here is one that I will be making over and over.  Let me know what you think?

I found eating the Healthy Nut Bread with applesauce was a great addition and added a little sweetness and of course some people will really enjoy it with butter.

Healthy Nut Bread

Preheat oven to 325 degrees F.

Ingredients:

5 eggs
1/4 cup vegetable oil
3.9 oz natural applesauce (lunch box pack)
1 teaspoon cinnamon
1 cup whole roasted almonds
1 cup hazelnuts
1 cup walnuts
1 cup pecans (I used roasted and salted)
1 cup flaxseeds
1 5 oz. package mixed dried fruit  (I used “Made In Nature – Super Berry Fusion” non GMO Organic Dried fruit -cranberries, blueberries, tart cherries, goji berries, raisins)
1/2 cup orange juice

Instructions:

Spray 9 x 5 x 2″ loaf pan with vegetable spray.  You can also line it with parchment paper if you want.  Mix together eggs, vegetable oil, applesauce cinnamon and flaxseeds.  Lightly chop nuts in food processor or by hand.  Add to egg mixture.  Add orange juice and stir until thoroughly mixed.  Pour mixture into loaf pan.  Bake at 325 degrees F for 1 hour.  Let cool and remove from pan.
