Avocado, Tomato, Corn and Shrimp Salad with Basil Vinaigrette is one of those salads that is healthy and delicious! Love, love, love me some avocado, and they are healthy, as much as 13 grams of fiber, 4 grams of protein and healthy fats. Actually avocados are high in fats but because they are healthy fats you don’t have to feel bad about eating them. Foods like avocados that contain monounsaturated fat lessen your LDL cholesterol, which is harmful to your body.
There are more than 80 varieties of avocados. The Haas Avocados are the most popular. They are mostly grown in California and are small and have a buttery flavor. Another variety is Florida Avocados and have a fruity flavor. Avocado mixes well with basil, lime, shrimp, tomatoes, mint, vinaigrettes, and fresh fruits like mango, papaya, and pineapple.
I made up this recipe for hubby and didn’t get to eat it myself, darn! He especially loved the basil dressing!
AVOCADO, TOMATO, CORN AND SHRIMP SALAD WITH BASIL VINAIGRETTE
Ingredients:
1 whole small Avocado, cut into pieces
1/2 large tomato or 1 medium tomato, cut into pieces
2 slices red onions, cut into pieces
1 corn on cob, grilled and cut off cob
4-6 large shrimp
5 basil leaves sliced thinly
Directions:
Chop each ingredient into pieces, grill the corn and remove from cob. Mix the avocado, tomato, red onions, corn and basil leaves. Place on plate and surround with shrimp. Place the dressing on the side so that each person can add their own amount.
Basil Vinaigrette ingredients:
1 large clove garlic, minced
1/4 cup Extra Virgin olive oil
1/4 cup cider vinegar
1 teaspoon dried basil
1 teaspoon honey
Mix all ingredients in a blender until creamy.
Salad serves 2
