This Portobello Mushroom Pizza dish is one of the first recipes that I made for the blog. I am always thinking of ways to work pizza into the menu. Did you grow up eating pizza every week like me? When I was in high school, I think we had pizza every Friday or Saturday night. Of course we always had meat, pepperoni, green pepper, and sometimes ham and onions. This recipe is a healthier version but with a lot of flavor. You won’t miss the meat!

Mixture of olive oil, pizza seasoning, garlic powder, 5 or 6 portobello mushrooms, cleaned with stems cut off.
Rub both sides of the portobello mushroom with the olive oil, pizza seasoning and garlic powder mixture.
The filling consists of 2 cups cooked rice, 1/2 cup yellow peppers, 1/2 cup onions and 1 cup of the pizza sauce.
Stuff the mushrooms with the rice mixture and top with additional pizza sauce and cheddar cheese.
Bake at 350 degrees F for 20 minutes. Top with basil leaf and serve.
This dish is very healthy served with a favorite salad.
