Christmas in Florida and I was hosting for the 2nd year. I love to host a big party of family and friends for the holidays. There were 13 of us and I wanted to make it special. Last year I had made a Prime Rib and this year I wanted something fancy, delicious but simple. So I ordered a Crown Roast of Pork from Publix. Corn Roast of Pork is a pork loin that has been cut and tied off in a certain way so that the bones stick up in the air and the butcher ties it off in a round shape and supplies the chef’s hats for the bones.
Here is the menu that I decided on.

After dinner we had a White Elephant Gift exchange. and that turned out to be a lot of fun. Most people don’t really give gag gift’s although you can in a White Elephant gift exchange. I received a beautiful necklace. and ring. But for my Mom who currently lives in an assisted living home with memory care I gave her a photo blanket. Hoping the photo blanket helps her remember her family.
So back to preparing the Crown Roast of Pork…….Crown Roast of Pork – Call you favorite grocery store and have them make you a Crown Pork for Roasting. Put lots of chopped garlic. olive oil, oregano, rosemary, salt, pepper and sage on the roast. Surround with carrots, onions, garlic cloves and 2 cups of chicken broth. Bake on 400 degrees F uncovered for 15 minutes and then reduce heat to 350 degrees F and cover and continue baking for a couple of hours.
Use meat thermometer and bake until roast registers 145 degrees. Remove from oven. Use juices from pan to make gravy. Place on an attractive platter and place the chef’s hats on the bones.
CROWN ROAST OF PORK
Ingredients:
1 Crown Pork Roast (Cut and Tied at Butcher)
4 garlic cloves minced
3 Tablespoons olive oil
spices: Salt, Pepper, Oregano, Sage, Rosemary
1 large onion sliced
1 cup carrots
3 garlic cloves
2 cups chicken broth
2 tablespoon butter
1 tablespoon flour
additional chiciken broth
Instructions:

Gravy: Use the juices in the pan, along with the onions, carrots, and garlic and puree in a food processor or blender. Set aside. In a skillet Melt 2 tablespoons butter. Add 1 tablespoons flour in the butter and some of the pureed juices and vegetables. Add more chicken broth as needed to make the gravy the right consistency. Salt and Pepper the gravy if needed.
