Bacon Wrapped Potatoes with Sriracha Dip would be great for a New Year’s Eve appetizer or as a Super Bowl appetizer. It seems that appetizer season is upon us with New Year’s Eve right around the corner and then there is Rose Bowl and Fiesta Bowl and then Superbowl. Okay anytime would be a great time to make these Bacon Wrapped Potatoes with Sriracha Dip. There some foods that many of us cannot do without. Lately Bacon and Sriracha are mine.
For Superbowl a few years ago I made these Bacon Wrapped Potatoes with Sriracha Dip. I had seen the Bacon wrapped potatoes on Martha Stewart but felt they needed a spicy dip to go with them and that is when I thought of Sriracha. The Sriracha Dip is made with a combination of mayonnaise and sour cream with the addition of garlic, sriracha and salt and pepper. You can make it as spicy as you would like by starting out with 1/2 teaspoon of sriracha and then going up from there to match your taste. If you want lower fat version you could use low fat mayo and low fat sour cream. All the guests loved these and they are a great party food. Some other tasty treats that I made that would be great for Super Bowl Party are Jalapeno Party Poppers and a Bloody Mary Drink
Bacon Wrapped Potatoes with Sriracha Dip
Ingredients:
8 Bacon slices, cut in half lengthwise
16 small potatoes
Directions:
Preheat oven to 400 degrees. Wrap each potato with a bacon slice and secure with a toothpick and place in a baking dish. Bake until bacon is crisp and potatoes are done.
SRIRACHA DIP
Ingredients:
3/4 cup sour cream
3/4 cup mayonnaise
1 garlic clove, minced
1 teaspoon sriracha
Salt and pepper
Directions:
Mix all ingredients together and serve with the Bacon Wrapped Potatoes.
